A meat cutting test is a standard procedure in grocery meat departments and food processing operations that measures the yield of usable product from a primal or sub-primal cut. The test records the weight of every sub-cut — retail cuts, trim, fat, bone, and waste — as a percentage of the starting primal weight. The resulting yield percentages drive pricing, purchasing, and production planning decisions.

A one-percentage-point shift in yield on a high-volume primal changes the department’s gross margin measurably. If a 25-pound beef chuck at $3/lb yields 60% saleable cuts instead of the target 65%, that’s $3.75 in lost retail value per primal.
