What Is a Labor Budget?
A labor budget translates a sales forecast into the number of hours each department can afford to schedule. In grocery retail, labor is typically the largest controllable expense after cost of goods, running 8–18% of sales depending on the department. Grocery and dairy run lean (6–9%) because the work is primarily stocking. Deli, bakery, and prepared foods run higher (15–20%) because the work is production-intensive. Getting the percentage wrong in either direction — overstaffing that erodes margin or understaffing that loses sales — is one of the most common operational problems in store management.
Day-of-Week Distribution
Grocery sales are not uniform across the week. Saturday typically accounts for 18–20% of weekly volume, while Tuesday and Wednesday may be 11–13% each. This tool includes a grocery-typical distribution curve that allocates hours proportionally, so Saturday gets more labor than Tuesday.
